1 1/2 cups oil
4 eggs
2 cups sugar
3 cups flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 tsp vanilla
3 cups apples, peeled and cut up
1 cup nuts
Combine all ingredients. Put in 2 floured and greased bread pans. Bake at 325 degrees for 1 hour and 10 minutes.

Even though it says to put nuts in some of my recipes, it is not necessary if they cause you problems.

I go to the nutrition center for lunch very often and there is a lady there that makes apple bread. It is delicious. I was so happy when Jean put this recipe on. It is suppose to be in the 50's here today.

Another great recipe from Jean. Hope everyone is enjoying their weekend and also getting prepared for Christmas. The stores here do not seem to be as busy as I thought they would be but maybe there will be a rush as Christmas draws nearer. It is mild here today with some rain.
