With St. Patrick's Day coming on March 17th, I thought you might like this recipe. I make this in our home.
JEAN'S IRISH SODA BREAD
2 cups flour
1 1/2 tsp sugar
3/4 tsp salt
1 tsp baking soda
1 tsp caraway seeds (opt)
3 Tbsp butter
2/3-3/4 cup buttermilk
1/4 cup currants or raisins
Milk for brushing
Combine flour, sugar, salt, baking soda and caraway in a food processor or a large bowl. Cut butter into flour until mixture resembled coarse meal. Add up to 3/4 cup buttermilk to make a soft but not sticky dough. Add raisins, knead dough until smooth, about 1 minute. Shape into a 5" disc and put in a baking pan. Cut a 1/4" deep cross in the top. Brush top with milk. Bake until golden, about 35 minutes at 375 degrees.

Thank you for this recipe Jean. My husband is Irish, so I'll definitely try this.
A while back I commented that I made the Tuna Burgers and they were delicious. Well there was one burger left, and the next day my husband and I split it right out of the fridge. It was even better cold. I think that this week I'll make a double batch so we can eat the first day burgers hot, and the second day ones cold. ~Doreen

Please thank Jean for this Irish Bread recipe. I am Irish and have attempted to make this bread without success (always too dry). I will definitely try Jean's recipe - I especially liked the 1/4 inch cross in the middle in keeping with Irish/Catholic tradition!!

I have made Soda bread before but it was a very plain recipe-I love the idea of adding the carraway seeds and fruit
