FRUIT COCKTAIL CAKE
1 3/4 Cup flour
1 cup sugar
1 t. soda
1 t. baking powder
3/4 t. salt
1 egg
1 16 oz. fruit coctail with juice
1 t. vanilla
1 cup brown sugar
1 cup walnuts
Combine all ingrediets except brown sugar and walnuts. Pour into a greased and floured 9"x13" cake pan. Sprinkle brown sugar and walnuts on top of batter. Bake at 350 degrees for 45 minutes to 1 hour.
This is a great cake to make for your home or pot luck supper. It also reminds me of Spring.

This sounds really good. I love fruit cocktail. The weather man is saying we might have snow tomorrow or the next day. Ugh !! Oh well, we have had snow here in May-hope it doesn't go that far this year.

I got a comment this morning on the Newark Roadside Diner, Newark, NY post that I had on February 8th. He has an article there saying that the Newark Diner is sold and will be moved to Buffalo, NY. I am glad Jim has found someone to buy it and can now retire, but I am so sad that it is moving to Buffalo-not that I have anything against Buffalo-I like Buffalo. It's just that I will be losing one of my favorite restaurants. As I told BuffaloItalianGuy, I guess I will have to go to Buffalo to eat there when they get it moved there. Must have one final meal there before they move it. Thank you BuffaloItalianGuy for letting me know. I really appreciate it.

I love anything with fruit in it. This recipe looks great. I bought more mandarin oranges to make the Creamsicle Cake again (which is one of my favorites).
How interesting that the Newark Diner is being restored and physically moved to Buffalo. I bet the prices won't be the same though. I wonder if their Fish Fry will use the same recipe.

I just checked what Jean gave me and there isn't any shortening or liquid except from the can. Right now Jean is busy and I won't get her on the phone. I can't tell you what she's doing or it will ruin her Monday post.
I bet the prices will go up in the diner when it moves. I do wonder if they will use any of the original recipes.

I googled Fruit Cocktail Cake and came up with several variations, but it looks like the basic cake doesn't have any oil or other liquid. The juice from the fruit cocktail must be enough. I never heard of this cake, but really like the idea of no oil. I'm definitely going to try it. Jean has great recipes. ~Doreen
Thanks for checking it out Doreen. I always worry since the time we made the mistake and I had to take that one off. I never heard of cake with no oil, but I guess this one is different. Sure Jean is glad you like her recipes.

My mother used to make a fruit cocktail cake that I really liked, but she's gone now and I never did get her recipe, so I'm very glad to get Jean's recipe. I've saved it and I'm sure going to try it, maybe tomorrow.
Another recipe my mother made that I really liked was sweetened sauerkraut that was thickened with flour. I've experimented, but I've never been able to duplicate it. I've also searched the internet, but I've never found anything like it. I'm wondering if you could check with Jean to see if she, Martha or Olive might know of anything like that. I would be so pleased if they do and you could post it.

I will pass you request for sweetened sauerkraunt on to Jean, Martha or Olive. As we live in sauerkraut country, someone should be able to come up with the recipe. If we find, I will see that it gets posted here.

I just went through all of our posts all the way back to the first one and took out all the SPAM. Now that I know where I can check on them, I will check them every day and try to keep as many off as I can. I don't want to get so clogged up where it's hard to get on here or we move real slow. So, I will try this system for a while. It was kind of fun seeing all the posts, but I don't want to have to go them every day.

Just dropping by and saw that someone was looking for a sweet sauerkraut recipe with flour. Try this one that I was able to find, Im also a Kraut fan myself. Rich
(Sweet sauerkraut)
1 large can or bag of sauerkraut
1 tsp caraway seeds
1/4 c sugar
1 medium onion
1/2 stick butter
3 tbsp flour
1-2 tbsp water
Step 1Drain sauerkraut. Add sauerkraut and caraway to medium saucepan and cover with water, bring to a boil then reduce heat to simmer.
Step 2 Melt butter in a small frying pan and saute onions until translucent. Add to sauerkraut and cover, simmering for 30 minutes.
Step 3 Combine sugar and flour, add 1-2 tbsp of water to make a paste. Slowly combine with sauerkraut mixture and simmer for 5 minutes.
