JEAN'S APPLE CIDER PIE
1 Pie Crust (top and bottom) *
1 cup apple cider
3/4 to 1 cup sugar
7 to 71/2 cups apple chunks*
2 Tbsp cornstarch
2 Tbsp water
1 Tbsp lemon juice
1 1/2 Tbsp butter
1 Tbsp vanilla
Cinnamon to taste
Combine cider, sugar, cornstarch, water and lemon juice in sauce pan and cook until thick Add butter, vanilla, cinnamon, and apples. Stir to blend, Fill pie shell and put on top crust. Sprinkle sugar on top crust. Bake at 400 degrees for 40-45 minutes.
*I use 1/2 Cortland and 1/2 golden Delicious apples\
*Sometimes I lace the top crust.
NOTE: A few years back Jean use to have Christmas Recipes on all our posts a week or two before Christmas. Would you be interested in that again this year? It takes her time to get these recipes together.
Also does anyone want a Christmas Recipe that they can't find? Do you have ideas for Christmas Recipes this year.

I am going to give this a try - I never had this kind of pie before.
YES, I would be interested in the sharing of Christmas recipes the weeks before! Some suggestions might be favorite cookie recipes and perhaps a recipe for stollen. Just a suggestion, of course - any family favorite Christmas season recipes would be fun. Another suggestion might be special items made for Christmas Eve or Christmas breakfast meals. We always try and serve something extra special at those times to our guests and family. Thank you! Chris
