JEAN'S BLUEBERRY MUFFINS
1 1/2 cups all-purpose four
1/2 cup sugar
1 cup fresh (or frozen) blueberries
2 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 egg beaten
2/3 cup buttermilk
1/4 cup margarine or butter, melted
3 tablespoons peach preserves
Topping
1 Tablespoon sugar
1/4 teaspoon ground cinnamon
Preheat oven to 400 degrees. Line 12 medium muffin cups with paper liners, set aside.
Combine flour, 1/2 cup sugar, blueberries, baking powder, 1 teaspoon cinnamon and salt in medium bowl. Combine egg, buttermilk and margarine in small bowl. Add to flour mixture; mix just until moistened.
Spoon about 1 Tablespoon batter into each muff
in cup. Drop scant teaspoon of preserves into center of batter in each up; top with remaining batter.
For topping. combine 1 tablespoon sugar and 1/4 teaspoon cinnamon in small bowl. Sprinkle evenly over tops of batter.
Bake 18 to 20 minutes or until lightly browned. Remove muffins to wire rack to cool completely.
I have found that someone is using Jean's recipes in a local newsletter, which I don't care and am in fact, impressed that they would use ours. I know who it is. We have these recipes on here for you to use and enjoy. We don't mind someone using them, but they should please have the courtesy to state they came from New York State of Mind. We do not want our personal names, or anything like that, but I do feel it should be noted that the recipe or recipes came from New York State of Mind.

ELMER TELLS WHAT HE AND ANNA DID ON SUNDAY
Today was an off Sunday, which means we do not have church on this Sunday. So I thought I would give you an idea of what we do on off Sunday.
We consider Sunday, the Lord's Day. Our day of rest. But, that still means we have chores to do on Sunday. I still have to milk the cows, collect the eggs and feed the animals. So when Anna and I get up in the morning, we do our chores. When we come back into the house, we have breakfast.
Now this leads to a rumor I heard. We are not allowed to cook on Sunday. That is not true. If we did that we would starve or be pretty hungry. Anna does all her baking by Saturday - like pies, cakes, bread, rolls, etc. Sometimes breakfast is casserole that Anna made on Saturday that she could put in the oven on Sunday morning. If I want bacon and eggs or pancakes or waffles, etc. - she makes then on Sunday.
The same goes with dinner. Whatever can be made on Saturday is - like salads, and more. But, we cook meat, potatoes and more on Sunday. We are not to spend our whole day cooking on Sunday, but most times you have to cook unless you are invited to someone's home.
After breakfast, Anna and I prayed. We read the Bible. Discus concerns that we think need prayer, people that need prayer and for things people ask to prayer for. We also, thank the Lord for all He has given us and done for us. Anna and I also sing. We do this for at least two hours, unless someone comes over.
Dinner time we had Hannah, Moses, their children, Anna's parents, John, Sarah, along with our daughter Alma and her family over to our house for dinner. If I counted right that came out to 23 of us. We had pot roast, mashed potatoes, vegetables, tossed salad, rolls, butter and more for dinner. After dinner we had apple pie and ice cream for desert. The children played outside after dinner, the ladies took care of the kitchen and us men sat and talked. Anna's Mother was having a confusing day, but there were a lot of us there to help her. They all stayed until shortly before milking time and left.
After milking Anna and I decided to take a walk. We just took a walk down the road just to talk and be together. A couple of different times Amish passed us in buggies asking if we wanted a ride, but we explained we were just out for a walk.
We got home and relaxed. Sat on our back porch where Anna and I read the paper. We talked and just did nothing. It did lead me to think about how lucky we are. We have a house, where some are living on the streets. We have a farm, where some people can not find work. We have food for our table where some people in the world are going hungry. I have a wonderful wife who loves and understands me - where some people are searching for their spouse. The Lord has graced us with a large family. I could go on and on. After discussing this, Anna and I again prayed, thanking the Lord for being so generous to us.
Right now, Anna is in the kitchen making us roast beef sandwiches for supper. We will have that with some of the salad that was left over from dinner. She said she might be able to scrape me up another piece of apple pie - which means she has another pie in that kitchen somewhere - or at least part of one.
We decided we re going to spend the evening home. But that does not mean that someone won't stop in and see us. We never know. Before we go to bed, we will have Bible reading, praying and singing.
So that is what we are doing today.

GRANDMOTHER OLIVE TALKS ABOUT AMTRAK
If I hadn't been home and answered the telephone you might not have had a post today. Jean must have forgotten that she had to have one on tomorrow. All the rest of the family, except Albert and I, are out working in the fields, garden or greenhouse. Albert and I were asked to stay near where we could hear the phone ring. Good thing we did.
Since the Amtrak accident people have asked Albert and I if we would go on it again. Of course, we would. We have seen buggy accidents, but we still use a horse and buggy. We have seen automobile accidents and we still have drivers take us places. What we don't know is all the Amtrak trains that make the trips every day and don't have accidents. We always hear about the ones that have accidents.
What concerned Albert and I was our Porter. When we came from Florida, we are on the same train that had the accident. We take the train into New York. Our Amtrak goes from Florida into Washington, DC through Philadelphia where the train wreck was and on into New York City where we switch trains and head to Rochester. Anyway we had the same Porter coming home as we had going down.
The younger Porter that was with him on our way to Florida is now training on another Amtrak train. So our Porter was taking care of our sleeping section alone this time. He knew us as soon as we got on and took us directly to the sleeper room. I said I guess he remembered me - and he said yes. It was the one the Porter gave us on the way down when I didn't like the other one. Just the room we wanted. He said reservations helped.
He gave all of us in the sleeping section excellent service. On the way up north Albert was tired at dinner time and wasn't going to dinner. I wouldn't go without him. When we didn't show for dinner, our Porter asked us why. When we explained way - he came back with a menu, took our order and brought our dinners to our room. He waited until he was sure we were done - took back our dishes and cleaned the table.
Albert and I took a nap, which we shouldn't have done, because when it came sleeping time we were wide awake. We were taking a walk through the train kind of late at night and we ran into the Porter. He said we asked him if he wanted to pray with us on the trip down, but he couldn't. All were bed down and if we wanted to pray, he could join us. So we went back to our room. We read the Bible. He gave us his favorite quotes. We prayed. We softly sang - he had a beautiful voice.
Finally Albert said to him that something was bothering him. He said no at first. But Albert insisted that he did. So he told us his problem. His first wife had passed away almost 20 years ago. So he and his Mother had raised his children who are grown up and married now. He met a lady and after going together for five years, they married last December. We thought maybe the problem was because he is black skin and she is white skin, but that wasn't it. She understood that he would be gone and working on the train. He would be home regularly, but would keep his job. She agreed.
Now that they are married, she misses him and would like him to find another job. If he retires at 62 he has 6 more years to go. If he waits until 65 - that is nine years. He could retire, but if he does, they won't give him his retirement until he is 62. Of course you never get at 62 what you would at 65. The only job he knows is being Porter on the train. He has done that for over 30 years.
Albert said this was his only paying work, but had he ever done any other work. Porter said he started picking cotton. He also sang at local bars, when he was young, but that was before he knew the Lord. When he was at home, he regularly sang at church. He also filled in for the minister when he was on vacation, ill or at a conference.
We prayed and then Albert said he was going to give him some fatherly advice. Pray, pray, pray. Don't leave the train job until he was sure he another one. Maybe he could get a job helping in a church. .Maybe he could get a job working in a motel or hotel as he has a lot of experience cleaning, and working with people regarding their rooms. Maybe work in a restaurant, but Porter didn't care for restaurant work. Albert told him to sit down and write down all the jobs he could do. But, don't quit before he had a job. Jobs are hard to find today. We said a final prayer and sung a song. Before we left we both gave him a hug and he gave us one.
So when we heard of the Amtrak accident we worried about our Porter being on there. We had his name so we waited and called Amtrak the next day. His name was not on the list of people on that train. They asked us to leave our names and numbers before they told us he wasn't on the list. What surprised us is a few hours later, we got a call from our Porter. One of the fellows that worked at Amtrak called him and told him we had called. He thanked us for his concern. Right now he was in Florida. Would be going back to work next week.
We are thinking of going on a trip on Amtrak this summer. Porter said to let him know when we are going and what train. Which led Albert to ask if Porter had ever had his wife on a trip on the train when he was working so they could be together. Porter has to check and see if that is allowed. He gave us his phone number and , of course, he has ours.
He told us not to worry just because of this accident. So many trains go every day and nothing like this happens. We noticed that the back end of the train didn't tip over, in the paper. Had we been on the train, that is where would have been in the back.
Jean came in and I told her I was giving Marilyn a post. Jean said she forgot. Usually they do these posts a few days ahead. Jean had been so busy in her garden and plants, she forgot.

MY FRIEND's GARDEN - PART 1
My friend is handicapped and can not walk around the outside of her house to see her flowers. So I walked around her house and took pictures of her flowers, so she could see them. The first three pictures are of her neighbor's tulips. The rest of them are part of her flowers. Will be having the rest of her flowers in another post.
