MARTHA'S COFFEE CAKE
MARTHA'S COFFEE CAKE
1/2 cup oil
1 c. sugar
1 beaten egg
1 t. soda
1 c. sour cream
1 1/2 c. flour
1 1/2 t. baking powder
1 t. vanilla
Mix oil, sugar and egg. Add soda to sour cream. Sift together flour and baking powder. Combine dry ingredients with sour cream and oil, sugar and egg. Add vanilla. Bake at 350 degrees for 30 minutes.
TOPPING
1/2 c. brown sugar
1/2 c. chopped nuts
2 T. cinnamon
Spread half of batter in ungreased 9"x13" pan. Top with half of the topping. Spoon rest of batter on topping: then add remainder of topping.
I don't remember seeing any coffee cake recipes on New York State of Mind and thought I would give the recipe for one.

ReplyDeleteThis recipe sounds delicious, especially with sour cream in it. I have company coming this weekend and I think it would be perfect to make for them. I can just picture having steaming coffee and a plate of coffee cake out on the porch watching the sun rise. I don't want to miss a minute of this beautiful weather. ~Doreen

ReplyDeleteSince I try to stay away from sour cream b/c it is really fattening and not great for u, what can I substitute for the sour cream?

ReplyDeleteI know there is diet sour cream out. It doesn't have the calories or carborhydrates (sp) that others do. I will ask Martha and see what see suggests, too.

Thank You Fionalina. I had never thought of using yogurt. Good idea! What kind of yogurt do u use, plain? or do u ever use vanilla?

ReplyDeleteYou are welcome Plaingrl -I always use plain and have never tried using a vanilla one-I am not sure that the vanilla flavour in the yoghurt would be strong enough to come through in a cake -without adding some extract
