JEAN'S SWEET POTATO CASSEROLE

JEAN'S SWEET POTATO CASSEROLE

3 1/2 cups mashed sweet potatoes
1 stick butter
1 tsp vanilla
1/2 cup white sugar
1 cup shredded coconut
2 beaten eggs

Mix together and place in baking dish.  Bake at 350 degrees for 20 minutes.

1 cup brown sugar
1 stick butter
1 1/2 tsp flour

Mix above ingredients until they form little balls the size of peas.  Sprinkle on top of potatoes.  Sprinkle 1 cup of nuts on top and bake an additional 20 minutes.

  2. This recipe sounds great. I love coconut and would have never thought of adding it to sweet potatoes.

    The gazebo in the photo is lovely. It's so unique with the bottom closed in. Is this near your house Marilyn, and what is it used for?

    I thought the adoption of Katie was final. It must be so stressful to know that her great grandparents can still take her away. I bet grandmother Olive is biting her tongue when she hears their comments.

    Glad you like the recipe.

    The gazebo is in a small town near where I live called Manchester, NY. I believe they have bands in the summer up in the section where the Christmas tree is.

    Olive and Albert have spoken to Katie's great-grandparents. Jean and David let them talk as they are closer to their age. Olive is being kind and not telling them what she would really like to say.

  4. Jean is taking off the week of December 30th, but Elmer is doing a post on Monday. Anna is giving an Amish recipe on Wednesday and I will come up with a post for Friday. Jean will be back with a post on January 6th.

    This will be Anna's first recipe for us.
