JEAN'S NEW ENGLAND CLAM CHOWDER


JEAN'S NEW ENGLAND CLAM CHOWDER

1 large onion
6 Tablespoons margarine
1 1/2 cups cubed raw potatoes
3 - 4 cans minced clams, drain juice from only one
1 can cream mushroom soup and/or cream of celery soup (may use home made)
3 cups milk
salt and pepper to taste

In a soup pot saute onion in 2 Tablespoons of margarine.
Add potatoes and 3 cups boiling water.  Simmer 20 minutes.
Add clams and soup.  Simmer 2 minutes longer.
Add milk and 4 Tablespoons margarine.  Salt and Pepper to taste.
Heat about 15 minutes.  DO NOT BOIL.
Soup may be thickened with corn starch, if desired.

    Jean thought with all the cold weather in our area, this would be a nice recipe.

    Please be careful if you live in the cold area. It is 14 right now and going lower. Took Pierre out and he did his business and got right back in.

  5. Tomorrow morning the wind chills in our area are predicted to be 20 below zero. Sunny at the moment, but conditions will deteriorate as time goes by. Still looking forward to Spring-LOL ;)! Carol

    It's suppose to go down real low here today. Then up to about 20 tomorrow. Then back down again. They are talking zero or below here at night. Spring can't get her fast enough.
