ANNA'S EASY EGGPLANT CASSEROLE

The church at the top is the Old Order Mennonite building that Jean, and her family go to.  Bishop Joseph is bishop at this church and another one. I chose the church for Saturday because of the cross in front.

ANNA'S EASY EGGPLANT CASSEROLE

1 1/2 lbs.  unpared eggplant, diced
3 medium onions, chopped
2 Tablespoons butter
2 egg yolks, beaten
1/2 c. grated Parmesan cheese
1 teaspoon salt
1 Cup dry bread crumbs

Cook vegetables in boiling water, about 20 minutes.  Drain, add remaining ingredients and pour into greased casserole.  Bake in moderate over (350 degrees) 30 minutes or until browned.

  6. Hello! It is so coincidental that you post a recipe for eggplant when that is what I prepared for our supper last night. Although it was not the same recipe, the eggplant was particularly nice and the casserole was tasty. I will try and make this the next time we come across some nice eggplants-I am planting some this summer in my garden so we will see how that goes!
    Also, I like the addition of the saying at the end of the post - sayings like that get you thinking and sometimes expand your mind. 'Hope you all have a wonderful and blessed Easter holiday shared with those you love most! Thank you....Chris
