1/2 cup diced red bell pepper
1/2 cup green bell pepper
1/3 cup green onions, sliced

Juice of 2 limes
2 Tablespoons olive oil
1/4 cup cilantro, steamed and chopped (Chinese Parsley)
pinch of salt and pepper
1/8 teaspoon garlic powder
Cut corn from the cob. Chop peppers, red and green. Slice green onions. Dice tomatoes. Chop cilantro. Put all vegetable ingredients in a bowl. Add the juice of 2 limes, garlic powder and the olive oil. Add salt and pepper to taste - light on the salt. Mix.
Sounds refreshing!
ReplyDeleteTom took the words right out of my mouth! HaHa! You beat me to it, and yes, it does "sound refreshing"! Blessings, Carol
ReplyDeleteThanks Jean and Marilyn! This looks good to me except I would change the cilantro to just parsley or basil as for some reason I just don't care for cilantro. Love salads and relishes too.
ReplyDeleteKeep cool!
Mary
Hi Folks,
ReplyDeleteI have been to the doctors, nutrition for lunch and taking care of that lady today, so I am been on the go. Went to the doctor just for a check up.
Will see that Jean gets your messages.
