JEAN'S LEMON BUTTER SNOWBARS

JEAN'S LEMON BUTTER  SNOWBARS-DECEMBER 21st

LEMON BUTTER SNOWBARS

CRUST
1/2 cup soft butter
1 1/2 cup flour
1/4 cup sugar

FILLING
2 eggs
3/4 cup sugar
2 tbsp flour
1/4 tsp baking powder
3 tbsp lemon juice

Preheat oven to 350 degrees.  In a 1 1/2 quart bowl combine crust ingredients.  Mix on low speed until blended, about 1 minute.  Pat into ungreased 8" square pan.  Bake near center of oven for 15 to 20 minutes or until brown on edge.

Prepare filling.  Combine all ingredients; blend well.  Pour filling over partially baked crust.  Return to oven for 18 to 20 minutes or until set.  Sprinkle with powdered sugar.  Cook and cut into 16 bars.

These don't last long in our house unless I made the recipe twice.  I learned to make one for us and another for guests.  Jean

Hope you all enjoy this recipe. Time is running short until Christmas. I still have to wrap my presents and I haven't sent my Christmas Cards yet. I am sure behind.

We are suppose to get snow later today or tonight. We might have that white Christmas yet.

Hi Vickie and Mabel, Glad you got yours. We are still waiting on our snow for our White Christmas. Like I say, I wish it would snow on December 24th and melt on December 26th and we are done with snow for the winter, but that's not what we always get. Of course last year wasn't bad. Oh, Pierre is going to put a post on before Christmas.

Good morning Marilyn. Another wonderful recipe I think I will need to try.Hope you get those cards and wrapping done. We have no snow in St. Catharines Ontario but I hope we have some for Christmas also. We did however get alot of rain all night. The temp. seems to be dropping some also as I just had the dog out and it was cooler. Looking forward to tomorrows recipe. Have a wonderful day. I am off to do some last minute shopping this morning. It's coming down now-that white stuff. No wind just snow-but I think the worse is yet to come. I think I got all my Christmas buying done including Pierre's. But you never know what will come up.
