HOT CROSS BUNS
1 cup scalded milk
3/4 teaspoon salt
1/2 cup sugar
1/2 cup shortening
1 yeast cake softened in 1/4 cup warm water
4 1/2 cups flour (about)
3 egg-yolks
1 cup raisins (opt)
Add scalded milk to salt, sugar and shortening. When lukewarm, add yeast and one and one-half cups flour. Beat well and let rise until very light. Add the egg-yolks, raisins and the reamining flour. Knead lightly and let rise until double in bulk. Roll out dough to one inch thickness and cut into rounds. Set those close together on a greased pan and let rise. Glaze the surface of each bun with a little egg-white diluted with water. With a sharp knife cut a cross on top of each bun. Bake about twenty minutes in a hot oven (400 F). Just before removing from the oven, brush with sugar and water. Fill the cross with a plain frosting.
This recipe is one I bake several times during lent - even other times of the year. As soon as I bake them, the are gone.

Good Morning Everyone,
I just woke up. Did you ever have one of those you can't sleep? I didn't get to sleep until 6:30 this morning and I woke up at 10:30 AM.. I don't think I'm getting much done today-it's half over already. Sure hope I sleep better tonight.

Well there are a few things that I'm not sure about in this recipe. I don'l know what scalded milk is, and the only yeast that I've used is the kind that comes in a small packet and is a powder. Maybe there is yeast that comes in a cake, in the same area of the grocery store. I never noticed. This recipe certainly sounds good though.
I would love a recipe a day for Holy Week.

I knw scalded milk is like just burning it a little. I think you can use any yeast, but I can't Jean on the phone right now, so I will try her again.

Doreen, scalded milk is milk that is heated until bubbles form around the edge of the milk, but not boiling. A packet of yeast is the same as a cake of yeast. You can put it in the 1/4 cups of water to dissolve and become frothy. Hope this answers your questions.

Jean and I just got off the phone and we will have a recipe a day from Palm Sunday until the Saturday before Easter (Holy Saturday). I will have a post on before it starts. So the recipe voters, won. Jean and I will get together. She didn't think tonight would be the best. She wants me awake.

It is snowing here this morning. Not much, but a little. I slept well last night. I rarely take a sleeping pill, but I did last night. I still feel the effects of it, but I had a good night's sleep. I notice that Pope Francis I is the new Catholic Pope. Hope he does well in these hard times.

As far as suggestions for recipes - How about recipes that can be associated with Easter Supper or a springtime special meal? I am always in search of new recipes that fit the bill.....I am not good with cooking things with ham so any recipes that include ham (or leftover ham) would be useful....Thank you Ma'am!
