JEAN'S APPLE COFFEE CAKE

JEAN'S APPLE COFFEE CAKE

1 21 oz can apple pie filling
2 t cinnamon
3 c flour
1 c sugar
1 1/2 c milk
1/2 c margarine, softened
3 t baking powder
3 eggs
1/4 c brown sugar
1/4 c chopped nuts
2 T melted butter

Heat oven to 350 degrees.
Spray 13" x 9" x 2" pan with Pam
Mix pie filling with cinnamon.
Constantly beat for 30 seconds, flour, sugar, milk, softened margarine, baking powder and eggs in large bowl.
Beat on medium speed, scraping bowl frequently for 2 minutes.
Pour 1/2 into pan.  Spoon half of pie filling over batter.
Repeat with remaining batter and pie filling.
Sprinkle brown sugar and nuts over pie filling.
Drizzle with melted butter.
Bake 45-55 minutes.  Serve warm.

GLAZE TOPPING:

3/4 c. confectioners' sugar
1 T. softened margarine
3/4 t. vanilla
2-3 t. hot water

Beat together until smooth and desired consistency is reached.

Love anything with the words "coffee cake" in it, so I'm sure most anyone who should make this will enjoy it.

Also I have changed the name of what was " Amish Stories" to www.PureCountryLiving.com. For me this name better reflects the kind of image's that I have been posting lately, and the kind of pictures that I have an interest in like "classic cars" and general country living.

And since I live in a Amish community myself along with being right next to Lancaster county which is the largest Amish settlement in the world, its really impossible for me "not" to include those images from our plain community.

So I will still be posting those since I am interested in their way of life, and have met so many during my travels posting on Amish Stories.

The recipe sounds great. I will try it when the heat settles down some. So good to see Richards comment and glad to know he is doing well. I will have to reput his site under the new name in my favorites. I am always looking at his pictures also. He is the reason I have come to Marilyns blog also. Greetings Veronica and yes I am doing well in spite of all the heat we are receiving here in the northeast, and I'm sure even in Canada your getting a little taste of this heat wave as well.


If any of the old blog followers click the old "http://amishstorys1.blogspot.com/ address it will still take you to www.Purecountryliving.com.

For me though the new domain name and address is the preferred one for me to use, but that's not in stone. So I consider that web address to be the new home of what I'm doing regarding my own images, and as anyone will see Pure-country-living has not really changed at all from Amish Stories other than the name.

And in truth I did not want to box "myself in" as only being a blog about the Amish, so even though I had been doing other things like posting classic cars I now have a new name to reflect my interest's.

And all I have to do is to roll out of bed and I will pretty much run into an Amish buggy, So I will still be sharing images of what I see in our Amish settlement as well as the Amish community in Lancaster county.

And with some old order Mennonites near me I will be snapping images of their way of life also! Richard

Buffalo has never reached 100 degrees and I'm so thankful for it. I hope you and your pets are doing okay Vickie. 103 - Wow!!

I love seeing your pictures Richard and I like the new name. I know that you have a few of the past posts listed on the side bar, but do you think you'll ever put the whole archive listing back? There are so many times that I wanted to go back and re-read some articles.

We have hit 100 degrees here. Not very often, though.

I like Richard's new name, too. I never thought about all those past posts. I liked to read them sometimes, too. I will miss Amish Stories, name, but there is a time to change.

I just went over to Richard's Pure Country Living and his old posts are there. IF you go down below the posts that are there you will find Old posts, like on here. You just hit old posts. When I hit it they started with December, 2012. I didn't go through all of them, but it does work.

Thanks Marilyn, I didn't think of just going to the bottom of the page and working backwards to see the older posts. It's easier with an archive box, but still doable by working backwards.

In all of Buffalo's record keeping history it has never reached 100, but that's just the readings at the airport. I'm sure areas further inland have been over 100. This weekend is suppose to be beautiful. Sunny and mid 70's. We, and my poor dogs are looking forward to it.

Oh, Doreen!!! I hear you with the dogs! I have a short hair-collie, Lab mix, and she is just dying!! she takes a lot of "soaks" in a big tub of cool water in the shade! Looking for my little girl? Oh..she is in the tub!!! LOL!!!

Hi Doreen and Sue Ann,
I have Pierre and now that he is cut short, the heat doesn't seem to bother him. It bothers me worse than him, but we have air conditioning in our apartment, so that helps. I don't know if his being born in North Carolina has anything to do with taking the heat.
We have hit 100 here, I think twice, since 2001. It was in the upper 90's today, but I am not sure how high.

Yes all of the older post's from Amish Stories are there, and to be honest I never considered getting rid of any of them.

So they will always be there, and I'm looking forward to posting ( at least try) interesting images.
