JEAN'S ZUCCHINI CASSEROLE

JEAN'S ZUCCHINI CASSEROLE

3 c. thinly sliced zucchini
1 c. Bisquick
1/2 c. chopped onion
1 clove garlic, minced
1/2 c. Parmesan cheese
1/2 t. salt
dash of pepper
2 T. parsley flakes
1/2 t. oregano
4 eggs, slightly beaten

Mix all ingredients together.
Pour into greased 9" x 13" pan
Bake at 350 degrees for 25-30 minutes,

Jean's Dad is diabetic and Jean's Mom and Dad went to nutrition meetings that offered these recipes and gave permission for them to go here. Just want to make sure that people will be interested. I will let you know when she will be putting one on.

We will put the first one September 18th. All of these will be cooked and eaten in either Jean's or her parents house before it comes on here. We want to make sure they taste good. I also have a friend of mine who is a diabetic nutritionalist and maybe I can get some of her recipes on here, too. I am boarder line diabetic so I can use all these I can get, too.

I hope to enjoy the up-coming Labor Day weekend, and if you love Drive-In movies maybe give my "temporary post" a look that I've just put on www.PureCountryLiving.com.


The last Drive-In that I had gone to was in 1967 ( I was 6 years old) and remember seeing " the Dirty Dozen", so even though I have not been to many of them they still are a very important part of American culture and I think as many as possible need to be saved before they are all gone!

The only movie I saw at a drive in was Towering Inferno. There use to be a drive- in the next couple of towns over. The screen is still up, but they haven't had movies there for years. Come on folks. Get over to PureCountryLiving,com and vote for your drive-in.

Hello Marilyn I hope you are doing fine and enjoying the nice weather before we move into fall. I have been reading the blog but have been so busy I finally have a moment to comment. How are you doing? Last weekend we hosted 80 guest at our Bible camp where our son serves for a surprise engagement. Our middle boy got engaged to a wonderful Godly young women who we love very much. They both have a heart for youth ministry. We are so excited. I must say planning a doing all the food kept my husband and I very busy. I remember thinking that more than this many people gather every other Sunday in many Amish and Mennonite communities for church and fellowship. What a blessed day it was. Hello also to Jean. I hope you are well and also the family. I also want to thank Sue Ann for all her recipes and tips that she has been sharing with us. So thoughtful of you to share your experiences with us. I will be going back and getting information and recipes now that things have settled down for me. Thanks also to Edward for sharing his recipes also. Anyway I am back with more time to comment and remember there are no words to describe what a blessing this blog is. Hi Richard I have also been enjoying your blog!! Veronica

Hi Everyone,

Sorry I have not answered your comments. Recently I got a swelling in my jaw, so I went to the MD today who gave me some medicine. I am trying to be tactful. That pill knocked me on my fanny. I have to take it four times a day. I hope this works better tomorrow than it does today. Sure can't stay this way for ten days.

Yes, thank her for this one and please post the diabetic recipes! I was at church tonight, and more people are still requesting a copy of Edward's Grandmother's Fruit Casserole recipe. They love that!
