JEAN'S LEMON SPONGE PIE

JEAN'S LEMON SPONGE PIE

1 unbaked 9 inch pie shell
3 Tablespoons butter, softened
1 1/4 cup sugar
4 eggs, separated
3 Tablespoons flour
dash of salt
1 1/4 cup milk
grated peel of 2 lemons
1/3 cup fresh lemon juice

Preheat over to 375 degrees

In large mixing bowl, cream together butter and sugar until light and fluffy.  Beat in egg yolks, flour, salt, milk, lemon peel and lemon juice.  In small bowl using clean beaters, beat egg whites until stiff, but not dry.Gently fold egg whites into large bowl mixture.  Pour into pie shell.  Bake at 375 degrees for 5 minutes, reduce heat to 300 degrees and bake for 45 minutes or until top is golden.  Toothpick inserted should come out clean.  Cool on pie rack.

Good Morning Everyone,

Someone requested the Lemon Sponge Recipe and here it is from Jean.

It is snowing this morning. It snowed yesterday and now today. Where is Spring ?????

Hi Marilyn+Jean, the Lemon Sponge Cake sounds really good! As to "where's Spring?"- it's coming, just not as fast as we would like. At 5:30am we had 20 degrees+2" of snow on the ground. Should be in low 40's today w/sun. Hopefully this is winter's "final hurrah"for this season. I've also heard this summer is supposed to be very hot+humid. I guess we human beings are never satisfied+Just complain about lots of things. We must remind ourselves that God is in control of everything always+ we must have an attitude of gratitude in good times+bad. Blessings to all, Carol

Good Morning Carol,
Right now, it is snowing here and the sun is shinning. So figure that. I just brought Pierre in from a walk. I always keep some winter pictures and last year I put them on when it was so hot in the summer. I know God controls the weather, but sometimes I wish He would hurry. Just my human way, I guess. We could be having blizzards now so I guess we don't have much to complain about. I do remember when it snowed in May.

Thank you Jean This is one recipe we will have to try. I love all things lemon. I hope things are well with you and David and the children. Your family holds a special place in my heart. Hello......Lemon Sponge Pie - YES!!!! Thank you so much for fulfilling my request! I am making this tomorrow for us and can almost taste it now. Our cold weather was a surprise to us too - Even here in southern NJ, we had snow and a freeze. Some of the tender vegetation plants at the local garden centers were damaged by the freeze, unfortunately.

I so appreciate the posting of these recipes and your generosity of spirit. Thank you all......Chris

Good Morning!

I just wanted to let you know the lemon pie was a huge success at our Easter table yesterday! Everyone who had a piece gobbled it down and there is but one piece left for us today. We try to incorporate a new dish each holiday meal so that we can expand the choices for our menus. I think this one will be requested again and again for future holidays! Thank you. Chris
