MARTHA'S - BLUEBERRY COFFEE CAKE
MARTHA'S BLUEBERRY COFFEE CAKE
2/3 c. sugar
1/3 c. liquid shortening
1 egg
1/2 c. milk
2 t. baking powder
1/2 t. salt
1 1/2 c. flour
1 c. blueberries
1 c. nuts (optional)
Beat together sugar, shortening and egg. Sift baking powder, salt, flour and add alternately with milk. Add blueberries and nuts (if desired). Pour into 9 inch square pan.
TOPPING
1/2 c. brown sugar
1/2 c. butter
nuts (optional)
Spread on cake and bake at 350 degrees for 25-30 minutes.
Okay folks, I need your help. Coming up with recipes wasn't as easy as I thought it would be. Like Jean, I have lots of recipes. What would you be interested in? Is there any recipe you are looking for? Do you have a special recipes you would like share?

Good Morning Everyone,
Last year when Martha was on, she gave a coffee cake recipe and everyone seemed to like it, so she came with another one this year.

This recipe looks great. I have everything except the nuts, and i think I would like to add almonds. As soon as I get to the store and buy the nuts I'll be making this.
I love any recipes with fruit. My second request would be side dishes with vegetables.

Good Morning! This recipe looks yummy! I would personally be interested in seeing side dish recipes and veggie recipes along with some pie recipes - My hubby is definitely a man who loves his pies and I am to please!

Hi Martha, do you think it would be ok to substitute apple sauce for the oil+use Splenda instead of regular sugar? Family member is diabetic. Thanks+blessings to you+your family, Carol

I got a hold of Martha and she said she wasn't sure about subsituting apple sauce for oil, but Splenda would be fine instead of regular sugar.
Being border line diabetic,I know that in the grocery store there are certain oils that you can buy that are okay for diabetics. They don't say for diabetic but the cholesterol, sodium, etc. are low or zero. The one I have is from Wegman's ( a chain grocery in our area) and is made of 100 per cent soybean. There are other brands you can get in most grocery stores.

I will see that Martha gets your requests. I think she has some recipes of dips as she was talking about them the other day. Most all want veggie recipes. I will tell her about the pasta too.
