JEAN'S EASY GARDEN VEGETABLE PIE

People have asked for recipes with vegetables and fruits in them, so I will try get many recipes on for them.  With Spring here and Summer coming, I am sure there will be a need for them.  I didn't forget the people that would like pie recipes too.  This recipe is for vegetables.  You can use fresh or frozen vegetables.   Jean

JEAN'S EASY GARDEN VEGETABLE PIE

2 C. chopped broccoli or cauliflower chopped ( can use either fresh or frozen.  If using frozen thaw, DO NOT COOK, chop up vegetables)
1/2 C. chopped onions
1/2 C. chopped green peppers
1 C. shredded cheddar cheese
1 1/2 C milk
3/4 C/ Bisquick baking mix
3 eggs
1 tsp salt
1/4 tsp pepper

Heat oven to 400 degrees.  Lightly grease pie plate that is 10" x 1 1/2" .  Mix broccoli (or cauliflower), onion, green pepper and cheese in pie plate.  Beat remaining ingredients until smooth.  Pour into pie plate.  Bake for 35 to 40 minutes until golden brown.  Let stand 5 minutes before cutting.

This sounds like a great recipe. One Jean makes at her house quite a bit.

Fantastic. I'm going to make this today. I was planning on making some sort of casserole, so this is perfect. I'm going to add either chicken or ham because I want it to be a one dish meal, and I'll take a picture (hopefully I'll remember).

That sounds great adding meat to it. I just thought, you could add hamburger to it, too. When you get it made if you could send a picture, I'll put it on here.

Thanks for the veggie recipe, Jean. I'll be making this soon. I, too, thought of adding protein to make it a "one dish meal". I guess your kids are out of school by now+everyone will have a very busy summer! Blessings to all, Carol
