JEAN'S STRAWBERRY SHORTCAKE MUFFIN CUP CAKES

When Anna and I gave the strawberry recipes last week, neither thought of the 4th of July that will here this week.  Time is sure passing fast.  So I am putting a strawberry recipe on this week.  Next week will be something else.

JEAN'S STRAWBERRY SHORTCAKE MUFFIN CUP CAKES

1 quart fresh strawberries
4 tablespoons sugar, divided
1 1/2 cups all purpose flour
1 Tablespoon baking powder
1/2 teaspoon salt
1/4 cup cold butter or margarine
1 egg
1/2 cup milk
Whipped cream

Mash or slice the strawberries; place in a bowl.  Add 2 tablespoons sugar and set aside.  In another bowl combine flour, baking powder, salt and remaining sugar; cut in butter until crumbly.  In a small bowl beat egg and milk; stir into flour mixture just until moistened.  Fill eight greased muffin ups two-thirds full.  Bake at 425 degrees for 12 minutes until golden.  Remove from the pan to cool on a wire rack.  Just before serving, split shortcakes in half horizontally.  Spoon berries and whipped cream between layers and over the top.

You don't have to use strawberries. You can use  blue berries, raspberries, peaches, ice cream in center topped with chocolate topping and more.

I and Anna have received a request for pies.  Do you want any special pie recipes?  Do you want just Amish or Old Order Mennonite pies?

It sure it hot today. I'm not complaining as it beats that white stuff we had.

Do you have a recipe for Bob-Andy pie? I've heard of it, but have never found a recipe.

I never heard of a Bob-Andy pie, but that doesn't mean Jean and Anna haven't. I will see that they get your request.

Hi Denise,
I called Jean, but got Anna. Seems Anna and Elmer's cell phone was dead so they took it to Jean's to charge. Jean gave them their cell phone in case they got a fire call until their phone charged up. Anyway Anna has the recipe. She said it was one that was popular when they lived in Indiana. We have the post on for this Wednesday, but she will give it to me put on here July 16th.
