ANNA'S CORN CHOWDER RECIPE

ANNA'S CORN CHOWDER

2 Tbsp bacon fat or butter or margarine
1/2 C chopped onion
2 Tbsp flour
1 qt milk
1/2 C thinly sliced celery
2 tsp sugar
1 1/2 tsp salt
1/8 tsp ground white pepper
3 C fresh corn kennels - about 6 ears (canned can be used)
2 eggs
1/4 C chopped parsley
3 slices crisp bacon, crumbled

In medium sized saucepan, melt butter, saute onion 3 minutes.  Stir in flour, cook and stir for 1 minute.  Blend in milk.  Cook, stirring constantly until mixture comes to a boil and thickens.  Stir in celery, sugar, salt, pepper and corn.  Cover and simmer over low heat for 10 minutes.  In small bowl, lightly beat eggs.  Stir 1 cup hot mixture into eggs.  Return to soup, heat but do not boil.  Stir in chopped parsley.  Sprinkle with crumbled bacon and garnish with a sprig of celery leaves, if desired.

This sounds really good, especially with the addition of bacon. I bet that adds a lot of flavor.

Wow, I've never heard of adding eggs to corn chowder. One of my teachers way back in the early 1960's used to tell us .... COUNT THE DAY LOST THAT YOU DON'T LEARN SOMETHING NEW. So today I learned something new.
