APPLE SALAD

This recipe came from Cornell University Cooperative Extension.  I can't remember if I put it on before or not.  But with apple season coming, I thought it would be a great salad.  Marilyn

APPLE SALAD

1 cup apple, diced
1 teaspoon lemon juice
1/2 cup celery, diced
1/2 cup carrot, grated
1/2 cup raisins
1/2 to 3/4 cup vanilla yogurt

Wash apples, celery and carrots before dicing and grating.  Toss apples with lemon juice.  Add celery, carrot and raisins.  Fold yogurt into apple mixture.  Cover.  Chill for at least 1 hour before serving.  Refrigerate leftovers.

Be creative !  Try adding 1/2 cup of chopped walnuts, almonds or pecans to the salad.

Makes 6 (1/2 cup) servings
Preparation Time: 15 minutes
Chillint time: 1 hour

I usually don't like mixing fruits and vegetables, but this sounds really good. Adding the nuts sounds good too. Thanks for the recipe.

It does taste real good. I really liked it. We didn't have nuts with what we ate, but for me, I would put nuts in it. Your welcome with the recipe.
