ANNA'S KIELBASA AND SAUERKRAUT DINNER

Jean and her family had been over to Elmer and my house for dinner.  They enjoyed the dinner very much and Jean asked me to put the recipe on here. This is an old Amish recipe.  I have cut it down to serving for four.  Sure hope you enjoy this in your home.

ANNA'S KIELBASA AND SAUERKRAUT DINNER

2 tablespoons olive oil
1 pound Kielbasa sausage, cut into 1/4-inch thick slices
1 small red onion, thinly sliced
1 small green bell pepper, cored, seeded and thinly sliced
2 cups sauerkraut, rinsed well drained
2 teaspoon Dijon mustard
1/2 teaspoon caraway seeds
1/4 teaspoon salt
1.4 teaspoon black pepper

In a large skillet heat oil.  Add sausage, onion, and bell pepper.  Cook over medium heat for 5 to 10 minutes or until  vegetables are tender and sausage is lightly browned, stirring occasionally.  Drain fat.

Add sauerkraut, mustard, caraway seeds, salt and black pepper to skillet.  Cook over medium heat 3 to 5 minutes or until heated through.

Anna said you can use either fresh or smoked sausage. When she made it for Jean and her family, she used smoked sausage.
