SWEET POTATO CASSEROLE

This has been a messed up day, Monday.  Anna had promised some friends she would go to a quilting today.  My back is out again and I can't get to the chiropractor until tomorrow, Tuesday.  So I am putting a recipe on today and will try to get Anna on later in the week.  She has someone new she is trying to get on here and we think you would like her post.  This is another southern recipe that Anna got a Pinecraft.

SWEET POTATO CASSEROLE

1 (2 1/2 lb) can sweet potatoes , drained (fresh sweet potatoes can be used)
1 cup sugar
1/4 cup butter
2 eggs
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

Preheat oven to 350 degrees.  Beat ingredients together in mixer or food processor until smooth.  Pour into greased 2-quart casserole.

TOPPING

1 cup coconut
1 cup firmly packed light brown sugar
1/3 cup self-rising flour
1 cup chopped nuts
1/4 cup butter or margarine melted

Mix ingredients together and spread on top of sweet potatoes.  Bake for 30 to 35 minutes.

Good Morning Carol,

Thank you so much especially for the prayers. Don't worry about the spelling, I do that, too. Last time this happened I went to my MD who sent me to my bone doctor who said it comes with age and could give me shots. Something about shots in my spine didn't turn me on. So I went to the chiropractor and she fixed me up. So I am cutting the other two and going straight to the chiropractor this time.

I hope you get all fixed up Marilyn. I am having increased pain also. We have had damp, cold weather for half a week!

Good morning! Sorry to hear of your back issues and pray that they will be resolved quickly! This recipe looks like a "keeper" and so appreciate your work on this blog even though you are not feeling well. If I lived closer, I would love to participate in the quilting - one of my favorite things to do. Many hands contributing makes the work go faster in quilting (and everything else too, actually). Chris

Thank you for your prayers. I really appreciate them. Would love to go to a quilting, too. I can't quilt, but just to see others do it would be great. You are right many hands makes the work go faster. Will have to ask Jean or Anna, maybe they will take me with them some time.

You've been posting a great variety of recipes. This one sounds very good. If I use fresh sweet potatoes should I cook them first, or just peel and slice them?

Hi Doreen,

So happy you like the recipes. We have really been working on these. They have to be soft enough so they won't hurt the mixer or blender when you run them. I made this recipe a long time ago. I think I used fresh ones, cut them and ran them through the blender without cooking them. Since then I have used canned ones simply because they are easier to find.

I went to the chiropractor and feel a lot better. It still hurts, but not as much as it did before. Must be careful on how heavy I lift. Don't do a lot of twisting.

Sorry to hear about your back, Marilyn. I have some exercises that I am supposed to be doing to help strengthen my back muscles so I don't have problems. Unfortunately, I only seem to remember to do them when reminded by the pain! :) Hope you're back up to snuff soon!
