GRANDMOTHER OLIVE'S RECIPES FOR HOMEMADE CRACKERS
Someone asked for recipe for homemade crackers, but didn't say what kind of crackers. So here are a couple of recipes that Jean and I make.
GRANDMOTHER OLIVE'S CHEDDAR CHEESE CRACKERS
2 cups all-purpose flour
1 teaspoon salt
1/4 teaspoon ground white pepper
1/4 teaspoon dry mustard
3/4 cup butter, chilled
1/2 cup shredded cheddar cheese
6 Tablespoons cold water, or so
In medium bowl, stir together flour, salt, white pepper, and mustard. Cut in butter, with folk until mixture resembles coarse crumbs. Add cheddar cheese. Stir in water, one tablespoon at a time until dough is held together. Roll the mixture into a ball, wrap and refrigerate for at least 30 minutes.
Set oven for 350 degrees. Line baking sheets with parchment paper.
On lightly floured surface roll the dough into a 16x12 inches rectangle about 1/8 inch thick. Cut into 1x3 inch stripes. Put stripes onto baking sheets about 1 inch apart.
Bake in oven for 10 to 12 minutes or until crisp. Remove from oven and let cool.
GRANDMOTHER OLIVE'S WHOLE WHEAT CRACKERS
1 3/4 cups whole wheat flour
1 1/2 cups all-purpose flour
3/4 teaspoon salt
1/3 cup vegetable oil
1 cup water
salt for sprinkling
Set oven for 350 degrees
Sift together whole wheat flour, all-purpose flour and salt. Pour in vegetable oil, water and mix together until blended.
On lightly floured surface roll out the dough until it is 1/8 inch thick. Place dough on ungreased baking sheet and mark squares out with knife BUT don't cut through. Prick each cracker with fork a few times, and sprinkle with salt.
Bake for 15 to 20 minutes or until crisp and light brown. Remove from oven. When cool remove from baking sheet and separate into separate crackers.

I never thought about making my own crackers. What a great idea, and it looks very easy.

Hi Folks,
Just thought I would tell you that pageviews are up to just over 1000 a day which is what I think we should be. There must have been something in the system. I did like the 3000 to 4000, but I will take the 1000 which I think is more what it should be.

i love coming to New York State of Mind and reading each and every post. i love reading posts by all of the authours! each authour has their own writing style and way of sharing - it makes for a nice few minutes of my day, without any of the hustle and bustle. please Marilyn, thank all of the authours, and please tell them how they are bringing a few minutes with The Lord into other people's lives, please tell them that i think that this is a form of service...and that i appreciate them, and you, so much.
i enjoy all of the authours but that Grandmother Olive sure packs a punch! she's awesome!

Last fall I started making my own crackers & collecting recipes. I like the homemade ones so much that I always keep some dough on hand in the freezer in case I run out. They are so much better than store bought crackers. I have to count my sodium, so now I can make crackers that I know exactly what is is them & control the amount of salt. Most recipes are easy to make & you can change up herbs, spices & seeds as you want. Thank you for providing these 2 recipes to my collection. I will be making them soon.
I need to try the whole wheat crackers. I haven't had much luck using whole wheat although I bake often. Guess I'm scared of it even though I know it's good. My whole wheat baking turns out dry or "heavy". Perhaps Grandmother Olive could give us some tips? Thank you, Carol in SC.
