JEAN'S BLUEBERRY MUFFINS
1 1/2 cups all-purpose four
1/2 cup sugar
1 cup fresh (or frozen) blueberries
2 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 egg beaten
2/3 cup buttermilk
1/4 cup margarine or butter, melted
3 tablespoons peach preserves
Topping
1 Tablespoon sugar
1/4 teaspoon ground cinnamon
Preheat oven to 400 degrees. Line 12 medium muffin cups with paper liners, set aside.
Combine flour, 1/2 cup sugar, blueberries, baking powder, 1 teaspoon cinnamon and salt in medium bowl. Combine egg, buttermilk and margarine in small bowl. Add to flour mixture; mix just until moistened.
Spoon about 1 Tablespoon batter into each muff
in cup. Drop scant teaspoon of preserves into center of batter in each up; top with remaining batter.
For topping. combine 1 tablespoon sugar and 1/4 teaspoon cinnamon in small bowl. Sprinkle evenly over tops of batter.
Bake 18 to 20 minutes or until lightly browned. Remove muffins to wire rack to cool completely.
I have found that someone is using Jean's recipes in a local newsletter, which I don't care and am in fact, impressed that they would use ours. I know who it is. We have these recipes on here for you to use and enjoy. We don't mind someone using them, but they should please have the courtesy to state they came from New York State of Mind. We do not want our personal names, or anything like that, but I do feel it should be noted that the recipe or recipes came from New York State of Mind.

It's not that they are using the recipe that is the problem. I don't care, they should be have courtesy and put New York State of Mind as their source. I know Jean has gotten recipes from other places and we always put where she got it from on.

Enjoyed Elmer's post ,very nice way to spend a Sunday. Sounds like what we used to do years ago when my parents and Grandma were still alive. How I miss those days.
Loved the pictures of the cow herd, they know how to relax and enjoy themselves.
And Jean's Muffin Recipe sound delicious, one I'm sure I will try. Blueberries and muffins are two of my favorite things. Was disappointed to hear that someone would share Jean's Recipes that way without asking permission and giving credit where credit is due.
