JEAN'S MOTHER'S HEALTH SALAD



JEAN'S MOTHER'S HEALTH SALAD

1 cup diced apples
1 cup diced celery
1 cup grated carrots
1 cup raisins
1 cup grated cheese
1 cup pineapple chunks
1 cup mayonnaise
1 cup chopped walnuts or pecans (if desired)

Toss fruit, vegetables and cheese together in a large bowl.  Add mayonnaise to mixture.  Add nuts.  Chill.  Serves 6

This sounds really good and I'd only change raisins to dried cherries or cranberries. A 1/2 batch would suffice for a couple days. Thanks to Jean for sharing her mom's recipe.
