Grandmother Olive's Green Beans with Ham

Grandmother Olive's Green Beans with Ham

2 teaspoons olive oil
1/4 cup finely chopped onion
1 clove garlic minced
1 pound fresh green beans (or canned)
1 cup chopped fresh tomatoes (or canned)
6 slices thinly sliced smoked ham
1 tablespoon chopped fresh marjoram
2 teaspoons chopped fresh basil
1/8 teaspoon black pepper
1/4 cup herbed croutons

Heat oil in medium saucepan over medium heat.  Add onion  and garlic; cook and stir about 4 minutes until onion is tender.

Reduce heat to low.  Add green beans, tomatoes, ham, marjoram, basil and pepper.  Cook about 10 minutes, stirring occasionally, until liquid is evaporated.

Transfer mixture to serving dish.  Top with croutons.

NOTE:  This recipe was given to me as a side dish, but Albert and I have eaten this as our main meal.  I delete the croutons, have a fruit salad and bread or corn bread.
