MARGARET'S SHORTCUT MINESTRONE SOUP

Margaret's Shortcut Minestrone Soup

4 slices bacon, cut up
1 envelope vegetable - tomato soup mix
4 cups water
1 16 oz can red kidney beans, drained
1 10 oz pkg frozen mixed vegetables
grated parmesan cheese

In 3 quart saucepan, cook bacon until crisp.  Drain and set aside.
In same pan, blend together dry soup mix, water,
beans and mixed vegetables.
Bring to boil.
Reduce heat, cover and simmer 10 - 15 minutes.
Use bacon and parmesan cheese to garnish soup.

This recipe was given to Margaret by one of her students Mother.

PALMYRA, NY - METHODIST CHURCH FOR SALE

On January 12, 2014, I told of Palmyra, New York being the only town in the USA with four churches on the four corners.  On January 26, 2014, I told of the Methodist Church.  It is sad, but the Methodist Church and parsonage are up for sale.  It is do to small members of the church.  I hope this ends up staying as a Christian church and parsonage.

ELMER'S FIRST POST OF 2020

Hope you all had a very Merry Christmas and have a happy, healthy and prosperous New Year.

We are kind of glad that 2019 is over.  It started when Bishop Joseph got a new horse.  Now usually when he gets a new horse that has not been trained, he turns it over to Jean's son Thomas or myself.  But this tine, he felt he could do it himself.  He thought he had the horse trained enough to ride and got on the horse.  It wasn't.  He went flying through the air when the horse bucked according to Martha his wife.  When he landed he had broken his leg.  There is good news and bad news to that.  The bad news is he broke his leg.  The good news is because he broke his leg and can't do church work as he did - he and Martha are at Pinecraft in Florida enjoying our cottage.

Jean, David, Katie, Susan and their son, David were all sick at the same time.  The people of their church and our church were seeing they got meals, chores got done and house was kept clean.  Anna and I had it, too.  We don't know whether it is the flu or just a cold going around.

Bishop Eli's wife Emma landed in the hospital with this sickness.  So the people were taking care of his house, too.  Emma came home on Monday, so Anna and Hannah have been seeing that Eli and Emma are getting meals.  The ladies of the church were there the Saturday before she came home to make sure the house was neat and clean.

So we are all kind of glad that 2019 is over.

Bishop Joseph gave me the horse that helped him break his leg to train.  I have worked with and have even taken it for a ride.  He wants to be able to ride it and pull the carriage.  This is unusual as a riding horse isn't used for pulling buggy and buggy horses aren't used for riding.  When I told Bishop Joseph how I was coming, he told me to sell it.  So, when I get done training it, I will take it to the auction and sell it for him unless I can talk Anna into letting me buy it.

JEAN'S CHOCOLATE CHIP CAKE

Jean's Chocolate Chip Cake

1 c. Chopped dates
1 1/4 c. Boiling water
1 c Sugar
3/4 c. Shortening
2 Eggs
2 c Flour
1 tsp Baking soda
1/2 tsp Salt
1 heaping Tbsp cocoa

Topping
1/2 c Sugar
1/2 c Chopped nuts
1 pkg Chocolate chips

Put dates in boiled water.  Cool.  Cream sugar, shortening and eggs.  Sift together flour, soda, salt and cocoa. Add cooled date mixture alternately with the flour mixture to the sugar, shortening and eggs, which have been creamed well.  Pout into 9X13 inch pan.

Topping

Sprinkle sugar, nuts and chocolate chips on top.

Bake at 350 degrees for 35 minutes.
