JEAN'S CHICKEN PIZZARELLA

JEAN'S CHICKEN PIZZARELLA

1/2 green pepper, chopped
1/2 onion, chopped
1 cup mushrooms, sliced
1 small clove garlic, minced
1/2 tsp oregano
8-oz can tomato sauce
salt and pepper to taste
8 chicken breast halves, boneless and skinless
4-oz shredded mozzarella cheese

Spray a small saucepan with cooking oil spray (like Pam).  Cook onion, green pepper, mushrooms, garlic and oregano over low heat, stirring occasionally until onion is soft. Stir in tomato sauce.  Place chicken on jelly roll pan.  Salt and pepper to taste.  Cover with sauce mixture,  Bake at 350 degrees uncovered about 55 minutes.  Top with mozzarella cheese and continue baking 5 more minutes or until cheese is bubbling.  Serves 8

The stove at the top is a vintage propane gas stove that I, found in an antique store.  The owner allowed me to take pictures of it.  I thought it would look nice with some of the recipes.

Glad you like the recipe and are going to try it.

I go to my stat alot. We have over 8000 now. When I showed them to Jean she says it doesn't show where they all go. I told her the most popular are hers and show her. But, if she doesn't see those comments, she thinks they are going some place else and no one is coming to her. Even Michael and Edward try to explain it to her.

I, too, am floored at all the people that come regarding the stats. I never thought I would have that many so soon.

I am not surprised about how many people are visiting-it is not easy to find reliable interesting information on the subject and when people do visit they will instantly see this-and will want to come back -and I am sure telling their friends also

Happy you like Jean's recipe. She is trying to keep recipes in with the seasons.

I know most of the people here are from Richard's Amish Stories, but I think we have some new people, too. I am glad. I was nervous that we wouldn't have any people. So glad that we are doing so well. Couldn't do it without Jean and Martha. They are the ones that are interesting.
