JEAN'S BLESSING PIE

BLESSING PIE

CRUST;

22 gingersnaps, crushed
5-7 tbsp butter or margarine melted

Crush gingersnaps and mix with melted margarine; pat into a pie plate and bake at 300 degrees for 10 minutes.  Cool.
(A spicy crust signifies the many treasures of a giving and receiving relationship (1 Kings 10:10 and 10:13)

FILLING

1 (8 oz) pkg frozen whipped topping, softened
1 (8 oz) can crushed pineapple, drained
1 (3.4 oz) pkg pistachio instant pudding
1/2 c. almonds, slivered
3/4 c. coconut, flaked

Blend whipped topping with crushed pineapple and pudding mix; top with slivered almonds and flaked coconut.  Chill.
(A cool, green filling symbolizes serenity-Psalms 23:2, pineapple, coconut and almond represent the fruits of the spirit-Galations 5:22-served with a generous helping from the blessing passage-Deuteronomy 28:2-6.

Good Morning Vickie and Chasity,
I had never heard of it before Jean gave it to me. I heard of Blessing Cake, but not pie.

I added the missing ingredients to my grocery list. This pie sounds great. I never had pistachio pudding before I made the Pistachio Bread, and liked it very much. So I'll try this pie too since I really like pineapple, almonds, and coconut. Thanks for these delicious recipes Jean. My family thanks you too. ~Doreen

Hi Doreen,
I will tell Jean what you said. I have used pistachio pudding on another pie recipe that I have. People really liked it. I still haven't made the Pistachio Bread, yet and I have the ingredients in my pantry. I better get with it.
