JEAN'S ZUCCHINI SUMMER SOUP


JEAN'S ZUCCHINI SUMMER SOUP

2-3 medium size zucchini, shredded or thin sliced
1 medium onion, thin sliced
2 Tablespoon butter
2 cups tomatoes, peeled and chopped
1 cup corn cooked
2 cloves garlic, finely chopped
2 quart chicken or vegetable stock
1 tsp basil
1 lb mild Cheddar cheese
Chopped parsley

Cook onion in butter until almost soft.  Add garlic, cook briefly.  Do not brown.  Stir in remainder of ingredients except cheese and parsley.  Bring to boil.  Reduce heat and simmer about 10 minutes.  Add salt and pepper to taste.  Ladle soup into bowls, grate cheese over top and garnish with parsley.

Make extra to freeze to serve on a cold winter day.

Hi Folks,
I have to tell you this. I can't believe it. Ever since I was a little girl I wanted a Victorian couch, but they have been our of my price range of if they were in my price range needed a lot of work on them. On June 6th, I went to house that the adult children were selling the furniture as both parents had passed away. There was this beautiful victorian couch. The lady said that it was an original and had been in the family for several generations. It was beautiful, but I couldn't afford it. The lady told me to come back on Sunday and it would be half price, but I still couldn't afford it, so I didn't come back. Yesterday, a friend that lives where I do said there was a couple in a red truck looking for the lady that wanted the Victorian couch. I said that was me. Today, I got the picture and a note from them. Because her Mom loved that couch and would be so happy if someone had it that also loved it - they are giving me the couch. She said for me to call her which I did today. I can't believe they are giving it to me. I have to get my couch out of my apartment before I take the delivery of the Victoria. They said they would hold it for me. I just can't believe this. I am so shocked, I don't know if I am making sense.

Oh Marilyn, What an awesome gift! Apparently The Lord has laid it upon the hearts of these people to give the Victorian couch to you. I'm sure you will cherish it always, just as this family has through the generations.
