WINTER FARMS AND FIELDS - HOLIDAY SAUSAGE PIE

Thought you might be interested in seeing some of the local farms and fields now that the snow feel.  Plan on going and taking more pictures tomorrow - if the weather holds.

JEAN'S HOLIDAY SAUSAGE PIE

1 9" unbaked pastry shell
1 lb bulk pork sausage (medium spiced)
1 lb small, whole fresh mushrooms, cleaned (may used canned mushrooms)
1/2 Cup minced fresh parsley
2 eggs
1 Cup half and half
1/2 Cup grated Parmesan cheese
1/2 teaspoon salt

Crumble sausage in large skillet and add mushrooms. Cook over high heat, stirring frequently, until mushrooms and meat are lightly browned and all liquid from mushrooms has evaporated. Drain off any excess grease.  Stir in the parsley.  Beat eggs with half and half and Parmesan cheese, blend in mushroom/sausage mixture and salt.  Pour into the unbaked pie shell.  Arrange mushrooms so that any stems are turned down in liquid.  Bake in preheated 400 degrees for 25 to 30 minutes or until crust is well browned and filling is set.  Let pie stand about 10 minutes before serving.

Do you have that much snow on the ground now? We are snow free, at least for now.
Its 45 degrees now but quite damp.

Good Morning Jodie,

Right now we do have that much snow on the ground, but it won't last. It's suppose to get up over 30 today and 40's for Sunday through Tuesday. Then we are suppose to get snow again. It is damp here right now, too.
