JEAN'S SALMON BROCCOLI BAKE

JEAN'S SALMON BROCCOLI BAKE

2 pkg. frozen broccoli spears (or fresh)
1 tbsp margarine
1 tbsp flour
1 tsp salt
1/4 tsp pepper
1 cup milk
1/2 cup grated, American cheese
16 oz tomatoes, drained (or fresh)
2 cans salmon or tuna, drained
2 tbsp bread crumbs

Preheat oven to 375 degrees.  Cook broccoli half as long as package directs. Drain and place in 2 quart casserole.  Melt margarine in saucepan, blend in flour, salt and pepper.  Gradually add milk, stirring constantly until boiling starts.  Cook over low 3 minutes, stir in cheese and tomatoes. Break salmon (or tuna) into chunks and place over broccoli, pour sauce over all.  Sprinkle with bread crumbs.  Bake 30 minutes.  Serves 6

Good Morning Carol,

Jean came up with the recipe because I have some frozen salmon in my freezer and asked her what I could do with it. Knowing I don't like broccoli, she said I could use cauliflower. Heat wise we are higher than you. We have 7 here right now. We are suppose to get the snow you are getting.

It is. I didn't think of that when she gave it to me, but maybe Jean did. Today is Ash Wednesday.
