We, too, enjoy eating Corned Beef and Cabbage in our home, not only on St. Patrick's Day, but other days throughout the year. So seeing St. Patrick day is coming in less than a week thought you might enjoy this.
JEAN'S CORNED BEEF AND CABBAGE
2 pound well-trimmed corned beef, boneless brisket or round
1 small onion, cut into fourths
1 clove garlic, crushed
1 small head green cabbage, cut into 6 wedges
6 small onions
6 medium carrots
3 potatoes cut into halves
3 turnips cut into cubes (if desired)
Pour enough cold water on corned beef in 5-quart Dutch oven just to cover. Add one small onion and garlic. Heating to boil; reduce heat. Cover and simmer until beef is tender for 1 hour 40 minutes. Skim fat from broth. Add small onions, carrots, potatoes and turnips (if desired). Cover and simmer 20 minutes. Remove beef to warm platter; keep warm. Add cabbage. Heat to boiling; reduce heat. Simmer uncovered until vegetables are tender, about 15 minutes. Serves 6 to 8 servings

Hi Marilyn,please thank Jean for sharing this recipe,I've been on the lookout for an easy recipe for corned beef and cabbage.This sounds good. Also please tell her that I don't have any specific requests at the moment but I always enjoy reading recipes.I love sweets but can't indulge in too many. My doctor says to eat more veggies. So maybe some vegetable recipes ?

Thanks, Jean! I agree with Ingrid, I think it would be great to find new recipes for vegetables. I would love to see what new ideas there might be to change things up a bit! But, anything tasty, quick and easy always catches my eye, so anything is appreciated!
