JEAN'S APPLE SALAD

JEAN'S APPLE SALAD

5 large Granny Smith apples
1 8-oz can crushed pineapple in its own juice
1 egg
2 Tbsp flour
2 Tbsp apple cider vinegar
1/2 cup sugar
1 8 - oz Cool Whip
1/2 chopped peanuts (if desired)

In a saucepan, combine the pineapple with juice, egg, flour, apple cider vinegar and sugar.  Cook over medium heat until thick like pudding.  Stir frequently so it doesn't burn.  Pour into bowl and refrigerate until cool.  Peel and dice the apples.  Mix in the pudding mixture, 1/4 cup shopped peanuts and Cool Whip.  Place in dish and top with remaining peanuts.

This sounds really good. Peanuts don't like me but I think pecans would go well with this. Thanks to Jean for sharing with us.
