1/2 cup chopped onion
1/4 cup chopped green pepper
2 Tbsp butter
2 cups noodles, cooked and drained
1 can mushroom soup ( 1 1/4 cups)
1 can tuna
1/4 cup Cheddar cheese
Cook onion and green pepper in butter until soft. Combine with cooked\ noodles, soup and tuna. Pour into 1 1/2 quart casserole, top with cheese. Bake at 400 degrees about 30 minutes or until top is lightly browned. You can also use salmon instead of tuna, if you like.

Marilyn......Please tell Martha that this recipe is on our menu for one night this week! I have been in a "rut" with our suppers making the same old thing and somehow had forgotten that this is a good option in the dinner rotation. I appreciate the suggestion.....Also, please stay warm with all this cold weather coming. Mother Nature is letting us know who rules the roost right about now! (How could we forget!).

Thank you, Martha, and to you, Marilyn, for posting this. I'll put tuna on my list as well as mushroom soup - I use Campbell's Healthy Request style as it's about half the sodium and tastes just fine.
And very much enjoyed Elmer's "report" yesterday. What a worry, thinking of those poor cows!

Many thanks Martha and Marilyn. Tuna./Mushroom casserole it shall be. Praying for all in polar vortex zones. Just heard from Cousin in Buffalo - 20 in. snow - and
when the wind stirs up, they cannot see the house across the street. Please be safe,
warm and together. If you see linemen working on your power and you can get to
them, furnish them with hot coffee or cocoa... what heroes.
I suppose one could do this with a different kind of meat.

I called Martha and read what you said. She enjoyed your compliments. She didn't think a tuna recipe would be that big a hit. She will have to check around and see what else she has. With this time of year casseroles are big at her house. Martha thanks you all.
