JEAN'S TURKEY MUSHROOM CASSEROLE


 Here is a recipe for the left over turkey after your Thanksgiving Dinner.

JEAN'S TURKEY MUSHROOM CASSEROLE

6 oz (3 cups) noodles

2 Tbsp minced onions

1 Tbsp butter or margarine

1 can condensed mushroom sou

1/2 c turkey broth or milk

1/4 tsp salt

1/4 tsp dried mustard

Dash of pepper

2 1/2 c diced cooked turkey

1/4 c blanched toasted almonds, cut into stripes

Cook noodles in boiling water (salted). Drain

Saute onion in butter until transparent.

Add soup, broth, and seasonings,  Stir until well blended. Heat to boiling. 

Put 1.2 of noodles in greased 2 quart casserole.  Add 1/2 the turkey and mushroom sauce.  

Repeat with noodles, turkey and sauce,  Sprinkle almonds over top.  Bake, uncovered in preheated oven at 375 degrees for 40 minutes.

I love leftovers! And this looks delicious. My mom used to make a turkey rice soup from the carcass - it was delicious. One of the ingredients was V-8 juice,another wild rice.
